Copy or confirmation of email being sent for self-enrollement

Hi all

We are using 1.9.5 and I am wondering if there is a place I look to see that the confirmation email that is supposed to be sent to new users who are self-enrolling has actually been sent?

We have instances where users say they havent received the email that allows them to confirm thier account. We of course test our system to make sure it generates an email, have them check spam/junk folders, but it would be nice if there was basically a "sent folder" for these automatically generated emails so I could confirm that and email was sent, to whom, and when.

Is this possible?
