if I correctly understand you have a working AD authentication setup working, but AD does not contain users personal email addresses so you can't map AD email attribute into Moodle.
Since Moodle consider email field a mandatory profile field, the first time a user authenticate, Moodle should present to the user the profile page to complete and unless you restricted some domains, gmail accounts should work.
According to AD attribute mappings, there could be other mandatory user profile filed to be completed prior your users can go further. If your users get stuck on the profile completion page also when all mandatory profile fields are filled, you may want to check if that could be related to "Email change confirmation" setting found in Site administration > Security > Site policies, which by default is set to yes.
